We are Francisco, Eddie and Jimmy (no, he is not in the picture below but that’s just because he lives in London!) and we’ve been friends for over a decade now.
We shared many adventures together, working side by side in busy restaurants for most of the past 10 years. From our shared passion for Hospitality and great, home-made food comes the idea to embark on yet another venture together: this is how the Braise Brothers was born (at least in our heads).

Every recipe you’ll try has roots in our native culinary cultures and is inspired by the heritage of Southern Europe (Portugal, Italy, Spain and France in specific). We are proud of making our food in-house and offer you authentic products and high quality ingredients. Francisco Duarte

Born and raised in Portugal, Francisco started working in hospitality at an early age. He moved to London in his late twenties and built his career in restaurant management working for one of the biggest restaurants in London, right in the heart of the city.
He arrived in Amsterdam in 2021, where he continued growing in the Horeca business, managing multiple well-known and estimated restaurants in the historic city centre.
His true passion, though, lays in the kitchen; this is why having the opportunity to open his own restaurant, and bringing his food to your table, is truly a dream come true.

Eduardo Correia

Part of his life was dedicated to the hospitality sector, where he brought deep compassion and excellence to his craft. Most of that time was spent in London, working for one of the most prestigious and renowned restaurants in the world. After years of building that foundation, the time came to reunite with his longtime "brother in crime." Together, they have channeled that same lifelong commitment and passion into launching their ultimate dream venture.

Bledi Rexhaj

Known as Jimmy by most, he is a natural problem solver with a practical mindset and an analytical eye; thriving where others see obstacles. Driven by curiosity and a constant search for the next Eureka moment, he embraces challenges as opportunities to learn, adapt, and grow.
Disciplined in his approach and passionate about his craft, he believes the best results come from commitment, creativity, and attention to detail. For Jimmy, good food is more than technique—it’s where passion meets personality, creating friendships and stories worth sharing.
